  • 12 oz paccheri pasta
  • 1 cup fresh ricotta cheese
  • 2 cups fresh spinach, sautéed
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Pinch of nutmeg

Instructions

  1. Gather all ingredients. Mince garlic and wash spinach thoroughly.
  2. Boil salted water in a large pot, add paccheri, and cook for 12-14 minutes until al dente. Drain and set aside.
  3. In a skillet over medium heat, add olive oil and sauté garlic until fragrant (about 1 minute). Add spinach; cook until wilted but bright green.
  4. In a bowl, combine ricotta, sautéed spinach, Parmesan, salt, pepper, and nutmeg until smooth.
  5. Fill each cooked paccheri with the ricotta mixture using a spoon or piping bag.
  6. Preheat oven to 375°F (190°C). Place stuffed paccheri in a baking dish with marinara sauce at the bottom. Top with more sauce and sprinkle with Parmesan. Bake for 20 minutes until bubbly.
