  • 2 cups fresh strawberries, hulled and halved
  • 2 tablespoons honey (divided)
  • 1 cup whole-milk ricotta cheese
  • 4 slices sourdough bread
  • 2 tablespoons balsamic glaze
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Toss strawberries with 1 tablespoon of honey and spread them on a parchment-lined baking sheet.
  2. Roast strawberries for 20-25 minutes until soft and caramelized.
  3. While strawberries roast, toast the sourdough bread until golden brown.
  4. In a bowl, whip ricotta cheese with the remaining tablespoon of honey until fluffy, about 3-5 minutes.
  5. Spread whipped ricotta on toasted bread, top with roasted strawberries and their juices, drizzle with balsamic glaze, and garnish with mint leaves.
