- 3 medium fresh beets (about 1 lb)
- 2 medium carrots, peeled and finely chopped
- 1 small red onion, finely chopped
- ¼ cup toasted pine nuts
- 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
- 2 tbsp apple cider vinegar (or white vinegar)
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wrap each beet in foil and roast for 45-60 minutes until tender. Allow to cool before peeling.
- While beets cool, peel and finely chop the carrots and onion.
- In a dry skillet over medium heat, toast the pine nuts until golden brown (3-5 minutes).
- In a small bowl, whisk together olive oil, vinegar, salt, and pepper for the dressing.
- Once beets are peeled and diced, combine them with carrots, onions, dill, and toasted pine nuts in a large bowl. Pour over the dressing and gently toss.
- Chill in the fridge for at least 30 minutes before serving to enhance flavors.
