  • 3 medium fresh beets (about 1 lb)
  • 2 medium carrots, peeled and finely chopped
  • 1 small red onion, finely chopped
  • ¼ cup toasted pine nuts
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
  • 2 tbsp apple cider vinegar (or white vinegar)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in foil and roast for 45-60 minutes until tender. Allow to cool before peeling.
  2. While beets cool, peel and finely chop the carrots and onion.
  3. In a dry skillet over medium heat, toast the pine nuts until golden brown (3-5 minutes).
  4. In a small bowl, whisk together olive oil, vinegar, salt, and pepper for the dressing.
  5. Once beets are peeled and diced, combine them with carrots, onions, dill, and toasted pine nuts in a large bowl. Pour over the dressing and gently toss.
  6. Chill in the fridge for at least 30 minutes before serving to enhance flavors.
