Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add rotini and cook until al dente according to package instructions. Drain and rinse under cold water to cool.
  2. Prepare the Veggies: While the pasta cooks, chop cherry tomatoes, dice cucumbers, and slice bell peppers. Combine in a large mixing bowl.
  3. Create the Dressing: In a small bowl, whisk together olive oil, vinegar, mustard, minced garlic, salt, and pepper until well combined.
  4. Toss Everything Together: Add cooled pasta to the mixing bowl with veggies. Fold in olives and Parmesan cheese. Drizzle dressing over and mix until evenly coated.
