  • 6 oz salmon fillet (fresh, skin-on)
  • 1 cup sushi rice (rinsed)
  • 1 ¼ cups water
  • 2 tbsp rice vinegar
  • 1 tbsp low-sodium soy sauce
  • ½ ripe avocado (sliced)
  • 1 tsp toasted sesame seeds
  • 2 tbsp scallions (finely chopped)
  • 2 tbsp spicy mayo (mayonnaise mixed with sriracha)

Instructions

  1. Rinse sushi rice until water runs clear; combine with water in a pot and bring to boil over medium heat. Reduce to low, cover, and simmer for 18 minutes until fluffy.
  2. Transfer cooked rice to a bowl, drizzle with rice vinegar, and gently fold to combine.
  3. Heat oil in a skillet over medium-high heat. Season salmon with salt and pepper; cook skin-side down for 4-5 minutes until crispy, then flip and cook another 3-4 minutes.
  4. Assemble by scooping sushi rice onto plates, topping with avocado slices and salmon pieces.
  5. Drizzle with soy sauce, sprinkle sesame seeds, add scallions and spicy mayo before serving.
