Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1/4 cup milk
  • 1 cup fresh spinach, finely chopped
  • 3/4 cup feta cheese, crumbled

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: Combine flour, baking powder, salt, and oregano in a bowl.
  3. Cream Butter: In a separate bowl, beat butter until smooth. Add egg and milk, mixing well.
  4. Combine: Gradually mix in the dry ingredients until dough forms. Fold in spinach and feta.
  5. Shape & Bake: Scoop spoonfuls of dough onto the baking sheet. Bake for 12–15 minutes or until edges are golden.
  6. Cool: Let cookies cool slightly before serving.
