- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp dried oregano
- 1/2 cup unsalted butter, softened
- 1 egg
- 1/4 cup milk
- 1 cup fresh spinach, finely chopped
- 3/4 cup feta cheese, crumbled
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: Combine flour, baking powder, salt, and oregano in a bowl.
- Cream Butter: In a separate bowl, beat butter until smooth. Add egg and milk, mixing well.
- Combine: Gradually mix in the dry ingredients until dough forms. Fold in spinach and feta.
- Shape & Bake: Scoop spoonfuls of dough onto the baking sheet. Bake for 12–15 minutes or until edges are golden.
- Cool: Let cookies cool slightly before serving.
