  • 2 large sweet potatoes (about 1 lb), peeled and diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  3. In another bowl, toss sweet potato cubes with remaining olive oil, garlic powder, salt, and pepper.

  5. Roast in the oven for 25-30 minutes or until chicken reaches an internal temperature of 165°F and sweet potatoes are tender.
