  • 1 lb large peeled shrimp
  • 4 cups vegetable broth
  • 2 tbsp low-sodium soy sauce

  • 1 tsp sesame oil
  • 2 sheets nori seaweed (optional)

Instructions

  2. Boil water in another pot and cook udon noodles according to package instructions until tender. Drain and set aside.
