Ingredients

  • 1/4 red onion, thinly sliced

  • 1 tbsp olive oil
  • 1 tsp honey (optional)
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Prepare Veggies: Thinly slice cucumbers and red onion. Add them to a large mixing bowl.
  2. Make the Dressing: In a small bowl, whisk together apple cider vinegar, olive oil, honey (if using), sea salt, and black pepper.
  3. Toss and Combine: Pour the dressing over the cucumbers and onions. Add parsley and dill, then toss until evenly coated.
  4. Chill: Let the salad sit in the fridge for 15–20 minutes to allow the flavors to meld.
