  • 4 oz high-quality smoked salmon, chopped
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • Freshly cracked black pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente; reserve some pasta water before draining.
  2. In a bowl, whisk together eggs, Parmesan cheese, and heavy cream until smooth.
  3. In a skillet over medium heat, sauté chopped smoked salmon until warmed through (2-3 minutes).
  4. Add hot pasta to the skillet with salmon and remove from heat.
  5. Quickly pour in the egg mixture while tossing to prevent scrambling; add reserved pasta water gradually until desired creaminess is reached.
  6. Season generously with black pepper and garnish with parsley if desired before serving.
