  • 1/2 cup all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup whole milk (or buttermilk)
  • 1/4 cup honey
  • 1/4 cup unsalted butter, melted
  • 2 large eggs (room temperature)
  • 1 cup corn kernels (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or mini popper pan.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In another bowl, combine milk, melted butter, honey, and eggs until smooth.
  4. Gently mix the wet ingredients into the dry ingredients until just combined.
  5. If using corn kernels, fold them in now.
  6. Fill each muffin cup about three-quarters full with batter.
  7. Bake for 15-20 minutes or until golden brown on top.
  8. Allow to cool slightly before serving warm.
