Instructions
- Prepare the sushi rice by rinsing it under cold water until clear. Cook according to package instructions until sticky and fluffy.
- Once cooked, mix in rice vinegar while the rice is still warm.
- Dice the salmon, slice the avocado, and chop the cucumber into small pieces.
- Cut nori sheets into squares and press them into muffin tins to create cups. Bake at 350°F (175°C) for about 10 minutes until crispy.
- Assemble by filling each nori cup with sushi rice followed by layers of salmon, avocado, cucumber, and a drizzle of spicy mayo.
