Description

Ingredients

  • 1 cup sushi rice
  • 2 tablespoons rice vinegar
  • 4 ounces sushi-grade salmon, diced
  • 1 ripe avocado, sliced
  • 1 medium cucumber, diced
  • 4 sheets nori, cut into squares
  • 4 tablespoons spicy mayo (mix mayonnaise and sriracha to taste)
  • 2 green onions, chopped

Instructions

  1. Prepare the sushi rice by rinsing it under cold water until clear. Cook according to package instructions until sticky and fluffy.
  2. Once cooked, mix in rice vinegar while the rice is still warm.
  3. Dice the salmon, slice the avocado, and chop the cucumber into small pieces.
  4. Cut nori sheets into squares and press them into muffin tins to create cups. Bake at 350°F (175°C) for about 10 minutes until crispy.
  5. Assemble by filling each nori cup with sushi rice followed by layers of salmon, avocado, cucumber, and a drizzle of spicy mayo.
  6. Garnish with chopped green onions and serve immediately.
