  • 200g rice noodles
  • 1 cup bell peppers, thinly sliced
  • 1 cup carrots, julienned
  • 1 cup cucumber, sliced
  • ½ cup fresh cilantro or mint leaves
  • 1/3 cup natural peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 clove garlic, minced (optional)
  • 1 tsp honey (optional)

Instructions

  2. Add rice noodles to boiling water and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
