- 8 oz rotini pasta
- 2 ears fresh corn (grilled)
- 1 cup cherry tomatoes (halved)
- 1/4 cup red onion (finely chopped)

- 1/2 cup feta cheese (crumbled)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water.
- Grill corn over medium-high heat until charred (about 10 minutes). Cool and cut off kernels.
- Chop cherry tomatoes, red onion, cilantro, and avocado into bite-sized pieces.
- In a large bowl, combine cooked pasta, corn kernels, diced veggies, lime juice, olive oil, salt, pepper, and feta cheese. Mix gently.
