  • 1/2 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse and poke holes in the sweet potatoes, then bake for about 45 minutes until tender. Allow them to cool before scooping out the flesh.
  2. In a mixing bowl, combine the sweet potato flesh with melted butter and both sugars; beat until fluffy.
  3. Add eggs one at a time while mixing, then stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually incorporate this into the wet mixture until just combined.
  5. Pour the batter into a greased 9×13 inch baking dish and bake for 30 to 35 minutes or until golden brown and a toothpick comes out clean.
