- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 packet taco seasoning mix
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) corn kernels, drained
- 1 can (10 oz) Rotel diced tomatoes and green chilies
- 4 cups chicken or beef broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, tortilla chips, fresh cilantro
Instructions
- Cook the Ground Meat:
- In a large pot or Dutch oven, cook ground beef over medium heat until browned. Drain excess grease.
- Sauté the Aromatics:
- Add onion and garlic to the pot, cooking until softened. Stir in taco seasoning, mixing well.
- Combine Ingredients:
- Add black beans, kidney beans, diced tomatoes, corn, Rotel, and broth. Stir to combine and bring to a boil.
