  • 1 lb salmon fillets
  • ½ cup teriyaki sauce
  • 1 cup white or brown rice
  • 1 cup mixed vegetables (bell peppers, broccoli)
  • 2 tbsp sesame seeds
  • 2 green onions, sliced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp honey or brown sugar
  • 2 garlic cloves, minced
  • 1 tsp ginger, minced

Instructions

  1. Rinse rice under cold water until clear. Cook according to package instructions.
  2. In a skillet over medium heat, sauté chopped vegetables in oil for about 5 minutes until tender-crisp.
  3. Season salmon with salt and pepper. Sear skin-side down in another skillet for 3-4 minutes until crispy.
  4. Flip salmon, pour teriyaki sauce over it, and simmer for an additional 3-4 minutes until cooked through.
  5. Assemble bowls by layering rice, veggies, and salmon on top. Garnish with sesame seeds and green onions.
