  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 cup creamy peanut butter
  • 2 tbsp Thai red curry paste
  • 2 tbsp low-sodium soy sauce
  • Juice of 1 lime
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • Fresh cilantro for garnish

Instructions

  1. Chop chicken into bite-sized pieces. Mince garlic and grate ginger.
  2. Heat oil in a large pan over medium heat. Add garlic and ginger; sauté until fragrant (about 1 minute).
  3. Add chicken to the pan, season with salt and pepper, and cook until golden brown (5-7 minutes).
  4. Stir in coconut milk, peanut butter, red curry paste, soy sauce, and lime juice until combined.
  5. Add bell peppers and carrots; simmer for about 5 minutes until slightly softened.
