  • 1 cup unsweetened almond milk
  • 2 tablespoons espresso powder
  • 1 teaspoon vanilla extract
  • 1 cup plain Greek yogurt
  • ½ cup mascarpone cheese
  • 2 tablespoons unsweetened cocoa powder (plus extra for dusting)
  • 2 tablespoons honey or maple syrup

Instructions

  1. In a medium bowl, combine rolled oats, almond milk, espresso powder, vanilla extract, and Greek yogurt. Mix until creamy.
  2. Gently fold in mascarpone cheese until well incorporated.
  3. Layer half of the oat mixture in jars, sprinkle with cocoa powder, then repeat with remaining mixture and another dusting of cocoa.
  4. Seal jars and refrigerate overnight (or at least four hours).
