Instructions

  1. Cook the tortellini in boiling salted water according to package instructions until they float (about 5-7 minutes). Drain and let cool.
  2. While the tortellini cooks, chop the cherry tomatoes, cucumber, red onion, and bell peppers into bite-sized pieces.
  3. In a large mixing bowl, combine cooled tortellini with the chopped vegetables.
