Ingredients

  • 2 pounds starchy potatoes (e.g., Russet)
  • 1 cup chopped green cabbage
  • 4 green onions, finely chopped
  • 4 tablespoons unsalted butter
  • ½ cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into even pieces. Place them in a pot of cold water and boil until fork-tender.
  2. While the potatoes cook, sauté the chopped cabbage in butter until tender and slightly caramelized.
  3. Drain the cooked potatoes and return them to the pot. Add warmed milk (or cream) and melted butter; mash until smooth.
  4. Gently fold in the sautéed cabbage and green onions until well combined.
  5. Season with salt and pepper to taste.
  6. Serve hot, optionally creating a well for extra butter.
