  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 4 whole eggs (separated)
  • 1 cup whole milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 1 cup heavy cream (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, and a pinch of salt.
  3. In another bowl, beat egg yolks and sugar until pale. Add vanilla extract and mix well.
  4. Gradually fold the dry mix into the egg yolk mixture until just combined.
  5. In a separate bowl, whip egg whites until stiff peaks form, then gently fold into the batter.
  6. Pour batter into prepared pan and bake for about 25-30 minutes or until golden brown.
  7. Mix condensed milk, evaporated milk, whole milk, and cinnamon in a bowl while the cake bakes.
  8. Once cooled slightly, poke holes in the cake surface and pour the milk mixture over it.
  9. Cover with plastic wrap and refrigerate for at least four hours or overnight.
  10. Before serving, whip heavy cream until soft peaks form and spread over the chilled cake.
