  • 1 can young green jackfruit (in brine or water)
  • 4 Yukon Gold potatoes, diced
  • 3 medium carrots, sliced
  • 1 large yellow onion, chopped
  • 4 cups low-sodium vegetable broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • 1 cup pearl barley
  • Salt and pepper to taste

Instructions

  1. Chop jackfruit into bite-sized pieces and dice potatoes and carrots.
  2. In a large pot over medium heat, warm olive oil and sauté onions until translucent. If desired, add garlic for extra flavor.
  3. Add jackfruit, thyme, rosemary, bay leaves, salt, and pepper; stir for about 3-5 minutes.
  4. Pour in vegetable broth to cover ingredients. Add potatoes, carrots, tomato paste, and pearl barley. Stir well.
  5. Bring to a gentle boil, then partially cover the pot and reduce heat to low. Simmer for 30-40 minutes until vegetables are tender but not mushy.
