- 4 Yukon Gold potatoes, diced

- 1 tsp dried rosemary
- 2 bay leaves
- 1 cup pearl barley
- Salt and pepper to taste
Instructions
- Chop jackfruit into bite-sized pieces and dice potatoes and carrots.
- In a large pot over medium heat, warm olive oil and sauté onions until translucent. If desired, add garlic for extra flavor.
- Add jackfruit, thyme, rosemary, bay leaves, salt, and pepper; stir for about 3-5 minutes.
- Pour in vegetable broth to cover ingredients. Add potatoes, carrots, tomato paste, and pearl barley. Stir well.
- Bring to a gentle boil, then partially cover the pot and reduce heat to low. Simmer for 30-40 minutes until vegetables are tender but not mushy.
