Ingredients

  • Mascarpone Cheese
  • Heavy Cream
  • White Chocolate
  • Fresh Raspberries
  • Savoiardi Cookies (Ladyfingers)
  • Powdered Sugar
  • Vanilla Extract
  • Coffee or Espresso (optional)

Instructions

  1. Melt white chocolate in a heatproof bowl over simmering water, stirring until smooth. Allow to cool slightly.
  2. Whip heavy cream until soft peaks form. Gently fold in mascarpone, powdered sugar, and vanilla until smooth.
  3. Fold melted white chocolate into the whipped cream mixture until fully combined.
  4. Rinse raspberries and let them dry; sweeten with powdered sugar if desired.
  5. Dip savoiardi cookies briefly in coffee (if using). Layer cookies, half of the mascarpone mixture, and half of the raspberries in a serving dish.
  6. Repeat layers with remaining ingredients. Cover and refrigerate for at least 4 hours or overnight.
