  • 8 hard taco shells
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning (about 1 oz)
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup diced tomatoes (fresh or canned)
  • ½ cup sour cream (or Greek yogurt)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground meat until browned. Drain excess fat and stir in taco seasoning with a splash of water.
  3. Stand the taco shells upright in a baking dish. Fill each shell with the meat mixture, then layer with black beans and diced tomatoes.
