- 4 large flour tortillas
- 2 cups shredded cheese (cheddar and Monterey Jack blend)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Vegetable oil for frying
- Sour cream for serving (optional)
Instructions
- In a skillet, cook ground beef over medium heat until browned (5-7 minutes). Drain excess fat.
- Add diced onion and sauté until translucent. Stir in minced garlic, cumin, and chili powder; cook for an additional minute.
- Remove from heat and mix in shredded cheese until melted.
- Spoon 1/4 cup of filling onto each tortilla, fold in sides, and roll tightly.
- Heat oil in a skillet over medium-high heat. Fry chimichangas seam-side down until golden brown (3-4 minutes per side).
- Drain on paper towels and serve warm with sour cream if desired.
