Ingredients

  • 1 cup cooked beets (fresh or canned)
  • 1/4 cup tahini
  • 2 cloves fresh garlic
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. If using fresh beets, peel and chop them into chunks. Cook by boiling for 30-40 minutes or roasting at 400°F (200°C) until fork-tender. If using canned beets, drain and set aside.
  2. In a food processor, combine cooked beets, tahini, garlic, lemon juice, olive oil, salt, and pepper.
  3. Blend until smooth. If the mixture is too thick, add water one tablespoon at a time until desired consistency is reached.
  4. Taste and adjust seasoning if necessary.
  5. Transfer to a serving bowl and drizzle with olive oil; garnish with sesame seeds or herbs if desired.
  6. Serve with pita chips or fresh vegetables.
