Instructions
- If using fresh beets, peel and chop them into chunks. Cook by boiling for 30-40 minutes or roasting at 400°F (200°C) until fork-tender. If using canned beets, drain and set aside.
- In a food processor, combine cooked beets, tahini, garlic, lemon juice, olive oil, salt, and pepper.
- Blend until smooth. If the mixture is too thick, add water one tablespoon at a time until desired consistency is reached.
- Taste and adjust seasoning if necessary.
- Transfer to a serving bowl and drizzle with olive oil; garnish with sesame seeds or herbs if desired.
