  • 8 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined
  • 8 oz Andouille sausage, sliced
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • ½ cup Parmesan cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the fettuccine in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Sauté onions and bell peppers until soft (about 5 minutes).
  3. Add sliced Andouille sausage and cook until browned (about 5 minutes).
  4. Stir in shrimp and minced garlic; cook until shrimp turn pink (about 3 minutes).
  5. Pour in heavy cream and add Cajun seasoning; let simmer for 2 minutes.
  6. Combine the cooked fettuccine with the sauce mixture; mix well and serve topped with grated Parmesan.
