  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup (for glaze)
  • 1/2 cup powdered sugar (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, baking soda, cinnamon, ginger, and nutmeg.
  3. In another bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined. Gradually mix in the dry ingredients until just combined.
  5. Drop rounded balls of dough onto prepared sheets about two inches apart.
  6. Bake for 10-12 minutes or until edges are golden brown. Cool on wire racks.
  7. For the glaze, mix maple syrup and powdered sugar; drizzle over cooled cookies.
