  • 1 cup sharp cheddar cheese, shredded
  • 1 pre-made pie crust (9-inch)
  • 3 large eggs
  • 1 cup whole milk (or almond milk for dairy-free)
  • 1 small onion, finely chopped
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If making your own pie crust, roll out on a floured surface to about 1/8-inch thick and place in a pie dish; trim excess.
  3. In a skillet over medium heat, sauté the chopped onion in oil until translucent, about 5 minutes.
  4. In a mixing bowl, combine corn, cheddar cheese, sautéed onion, eggs, milk, salt, and pepper; stir until well-mixed.
  5. Pour the filling into the prepared crust and spread evenly.
  6. Bake for 30-35 minutes or until the top is golden brown and set in the center.
  7. Allow to cool for 10 minutes before slicing and serving warm.
