  • 2 cloves fresh garlic, minced
  • 2 ripe avocados
  • 1 large red bell pepper, sliced
  • 2 cups fresh spinach or romaine lettuce
  • 4 large tortillas
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fresh lime juice

Instructions

  1. Preheat your grill or stovetop pan over medium-high heat. Season chicken breasts with salt, pepper, and minced garlic. Grill for about 6-7 minutes per side until cooked through (internal temperature of 165°F).
  2. While the chicken cooks, mix soy sauce and lime juice in a small bowl for the sauce.
  3. Let the cooked chicken rest for a few minutes before slicing it into strips. Meanwhile, slice the avocados and chop the red bell pepper.
