  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 2 tsp Italian seasoning
  • 3 cloves fresh garlic, minced
  • 28 oz canned crushed tomatoes
  • 1 tsp Italian seasoning (for sauce)
  • 8 oz fresh mozzarella cheese, sliced
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper. Dredge in flour, dip in beaten eggs, and coat with panko breadcrumbs mixed with Italian seasoning.
  3. Heat olive oil in a skillet over medium heat. Sear each chicken breast until golden brown on both sides (about 4 minutes per side).
  4. In another pan, sauté minced garlic until fragrant, then add crushed tomatoes and Italian seasoning; simmer for about 10 minutes.
