- ½ cup sour cream (for serving)
Instructions
- Preheat a large skillet over medium heat and add olive oil.
- Season chicken breasts with salt and pepper; cook in the skillet for about 6-8 minutes on each side until golden brown. Remove and let rest.
- In the same skillet, sauté sliced bell peppers and minced garlic for about 5 minutes until tender.
- Shred the cooked chicken using two forks.
- Lay a tortilla in the skillet, sprinkle half with cheese, add chicken and sautéed peppers, then fold over. Cook until crispy and golden (about 3-4 minutes per side).
- Serve with a dollop of sour cream.
