  • 1 (10 oz) can Rotel diced tomatoes
  • 8 oz spaghetti
  • 8 oz cream cheese, softened
  • 1 cup shredded Cheddar cheese
  • 1 cup chicken broth
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare all ingredients.
  2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper; cook until golden on both sides (5-7 minutes per side). Remove from heat, let rest, then shred.
  3. Boil salted water; cook spaghetti according to package instructions until al dente (8-10 minutes). Drain.
  4. In a mixing bowl, combine shredded chicken, cooked spaghetti, drained Rotel tomatoes, softened cream cheese, chicken broth, onion powder, and half of the shredded cheese. Mix well.
  5. Transfer the mixture to a greased baking dish; top with remaining cheese. Bake for 25-30 minutes until bubbly and golden.
