- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ½ cup granulated sugar
- 24 oz cream cheese, softened
- 1 cup sour cream
- 3 large eggs, room temperature
- 2 tsp ground cinnamon
- 2 tsp vanilla extract
- 1 cup powdered sugar
- 2–3 tbsp milk
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar; press into the bottom of a springform pan.
- In a large bowl, beat softened cream cheese until smooth. Add sour cream, eggs (one at a time), vanilla extract, granulated sugar, and cinnamon; blend until creamy.
- Pour half of the cheesecake batter over the crust; sprinkle with cinnamon-sugar mixture. Pour remaining batter on top and swirl lightly with a knife.
- Bake for 60–70 minutes until set but slightly jiggly in the center. If edges brown too quickly, cover with foil.
- Let cool completely at room temperature before refrigerating for at least four hours (or overnight).
- Whisk powdered sugar and milk together for drizzling; pour over cheesecake before serving.
