  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • 1 tsp dried thyme or parsley (or to taste)

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray and season chicken with salt and pepper.
  2. In a medium bowl, mix softened cream cheese, minced garlic, and soy sauce until smooth.
  3. Place seasoned chicken in the baking dish and pour the cream cheese mixture over it.
  4. Add chicken broth around the edges of the dish and sprinkle with herbs.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  6. Serve hot, drizzling remaining sauce from the dish over each portion.
