Delight in tender artichokes nestled on creamy whipped ricotta, finished with zesty herb gremolata—a sophisticated appetizer for any gathering.


Ingredients

  • 4 fresh artichokes
  • 1 cup fresh ricotta
  • 2 tsp olive oil (for ricotta)
  • Salt to taste (for ricotta)
  • 1/4 cup parsley, finely chopped
  • 1 clove garlic, minced
  • Zest and juice of 1 lemon
  • 2 tbsp extra virgin olive oil (for gremolata)
  • Salt to taste (for gremolata)

Instructions

  1. Trim the tops and stems off the artichokes, removing tough outer leaves until tender.
  2. Boil salted water in a large pot; add artichokes and cook for 25 minutes until fork-tender. Drain upside down.
  3. In a mixing bowl, combine fresh ricotta with olive oil and salt; whip until smooth.
  4. In another bowl, mix parsley, garlic, lemon zest, and juice; stir well to create gremolata.
  5. Serve artichokes over whipped ricotta and generously top with herb gremolata.
