Description

Buffalo chicken stuffed peppers are a spicy, cheesy delight that combines tender chicken, zesty buffalo sauce, and colorful bell peppers for an irresistible dish perfect for any occasion.


Ingredients

  • 4 large bell peppers (red or yellow)
  • 2 cups cooked, shredded rotisserie chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish.
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix shredded chicken, cream cheese, buffalo sauce, garlic powder, and half of the cheddar cheese until creamy.
  4. Stuff each pepper generously with the mixture and top with remaining cheese.
  5. Place peppers upright in the baking dish and cover with foil. Bake for 25-30 minutes. Remove foil during the last 10 minutes to melt cheese.
  6. Garnish with chopped green onions before serving.
