  • 2 lbs starchy potatoes (Russet or Yukon Gold)
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 2 large egg yolks
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp nutmeg (optional)

Instructions

  1. Peel and chop potatoes into even pieces. Boil in salted water until fork-tender (15-20 minutes). Drain well.
  2. Return potatoes to the pot over low heat. Add butter and heavy cream, mashing until smooth.
  3. Stir in egg yolks, salt, pepper, and nutmeg until well combined.
  4. Transfer the mixture to a piping bag with a star tip or use a ziplock bag with one corner snipped.
  5. Pipe swirls onto a parchment-lined baking sheet.
  6. Preheat oven to 400°F (200°C) and bake for 20-25 minutes until golden brown.
