Instructions
- Peel and chop potatoes into even pieces. Boil in salted water until fork-tender (15-20 minutes). Drain well.
- Return potatoes to the pot over low heat. Add butter and heavy cream, mashing until smooth.
- Stir in egg yolks, salt, pepper, and nutmeg until well combined.
- Transfer the mixture to a piping bag with a star tip or use a ziplock bag with one corner snipped.
- Pipe swirls onto a parchment-lined baking sheet.
