- 1 cup long-grain white rice
- 1 oz taco seasoning (1 packet)
- 1 cup chopped bell peppers (any colors)
- 1 medium onion, finely chopped
- 2 cups water or broth
- Shredded cheese and sour cream for topping (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef or turkey for about 5-7 minutes, breaking it apart as it cooks. Drain any excess fat.
- Add the chopped onion and bell peppers to the skillet and sauté for 3-4 minutes until softened.
- Stir in the taco seasoning, followed by the rice and water (or broth). Mix well.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20 minutes until the rice is tender and liquid is mostly absorbed.
- Remove from heat and fluff with a fork. Adjust seasoning if needed.
- Serve hot, topped with shredded cheese and sour cream.
