Instructions
- Gather and prepare all ingredients. Break up day-old rice into separate grains.
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Scramble the eggs until fully cooked, then remove from the pan.
- In the same skillet, add another tablespoon of oil and sauté mixed vegetables until tender (about 3-4 minutes).
- Add the cooked rice, soy sauce, and oyster sauce to the skillet; stir well to combine and let cook for about 3 minutes.
- Return scrambled eggs to the pan along with sesame oil and green onions. Toss everything together until evenly mixed.
