  • 3 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 large eggs
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. Gather and prepare all ingredients. Break up day-old rice into separate grains.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Scramble the eggs until fully cooked, then remove from the pan.
  3. In the same skillet, add another tablespoon of oil and sauté mixed vegetables until tender (about 3-4 minutes).
  4. Add the cooked rice, soy sauce, and oyster sauce to the skillet; stir well to combine and let cook for about 3 minutes.
  5. Return scrambled eggs to the pan along with sesame oil and green onions. Toss everything together until evenly mixed.
  6. Serve hot, garnished with extra green onions if desired.
