- 4 cloves garlic, minced
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- Salt and pepper to taste

Instructions
- Preheat oven to 400°F (200°C).
- Wash and chop vegetables into bite-sized pieces.
- In a small saucepan over low heat, melt butter and stir in minced garlic until fragrant (about 2 minutes).
- Toss vegetables in a bowl with olive oil, salt, pepper, and half of the garlic butter mixture until well-coated.
- Spread veggies on a baking sheet; pour remaining garlic butter over them.
- Roast for 20-25 minutes until tender and caramelized, stirring halfway through.
