Description

Garlic Butter Veggies are a delightful and vibrant side dish that elevates any meal with their rich flavors and eye-catching appearance.


Ingredients

  • 2 cups mixed vegetables (bell peppers, zucchini, broccoli, carrots)
  • 4 cloves garlic, minced
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and chop vegetables into bite-sized pieces.
  3. In a small saucepan over low heat, melt butter and stir in minced garlic until fragrant (about 2 minutes).
  4. Toss vegetables in a bowl with olive oil, salt, pepper, and half of the garlic butter mixture until well-coated.
  5. Spread veggies on a baking sheet; pour remaining garlic butter over them.
  6. Roast for 20-25 minutes until tender and caramelized, stirring halfway through.
