  • 4 (6 oz) fresh skinless salmon fillets
  • 1/4 cup raw honey
  • 3 tbsp Sriracha sauce (adjust for spice level)
  • 2 cups cooked jasmine or brown rice
  • 1 cup bell peppers, chopped
  • 1 cup carrots, chopped
  • 1 cup broccoli florets
  • 4 green onions, chopped (for garnish)
  • 2 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Prepare the rice according to package instructions. Rinse thoroughly under cold water until clear.
  2. In a bowl, whisk together honey and Sriracha until combined.
  3. Heat oil in a non-stick skillet over medium-high heat. Place salmon fillets in the pan skin-side down. Cook for about 4-5 minutes until golden brown.
  4. Flip the salmon and pour half of the honey-Sriracha mixture over it. Cook for an additional 3-4 minutes until fully cooked and glazed.
  5. While the salmon cooks, stir-fry the vegetables in another skillet for about 5-7 minutes until tender but vibrant.
  6. To serve, scoop rice into bowls, top with glazed salmon, arrange veggies around it, drizzle with remaining sauce, and garnish with green onions and sesame seeds.
