  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 3 cloves fresh garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a large baking dish with nonstick spray.
  2. In a skillet over medium heat, cook the chicken until no longer pink (about 7-10 minutes per side). Shred the chicken into bite-sized pieces.
  3. Sauté the onion and bell peppers in the same skillet until soft (about 5 minutes).
  4. In a bowl, combine cream of chicken soup, sour cream, minced garlic, salt, pepper, and crushed tortilla chips. Mix in the shredded chicken and sautéed vegetables until well-coated.
  5. Layer half of the mixture in the prepared baking dish. Top with more crushed tortilla chips and then the remaining mixture. Finish with shredded cheddar on top.
  6. Bake for 30-35 minutes or until bubbly and golden brown. Let cool for five minutes before serving.
