  • 4 medium zucchinis (spiralized into zoodles)
  • 4 cloves fresh garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Juice of 2 lemons (freshly squeezed)
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by spiralizing the zucchini into zoodles and setting them aside.
  2. Season the chicken with salt and pepper. Heat olive oil in a skillet over medium heat and sear the chicken for about 6-7 minutes per side until golden brown and fully cooked. Remove from skillet.
  3. In the same skillet, add minced garlic and sauté until fragrant.
  4. In a bowl, mix soy sauce, honey, lemon juice, and a splash of water. Pour into the skillet with the garlic and simmer for one minute.
  5. Return the chicken to the skillet along with zoodles, tossing gently to coat without overcooking the zoodles.
