Ingredients
- Whole chicken (4-5 pounds)
- Fresh lemons
- Fresh thyme
- Fresh rosemary
- Garlic
- Extra virgin olive oil
- Salt
- Pepper
- Optional: Carrots and potatoes
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix olive oil, minced garlic, chopped thyme, rosemary leaves, salt, and pepper for the marinade.
- Pat the chicken dry and rub the marinade all over the chicken, including inside the cavity. Squeeze lemon juice over it.
- If desired, chop carrots and potatoes into chunks and place them around the chicken in a roasting pan.
- Roast in the preheated oven for about 1 hour 15 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving. Serve with roasted vegetables.
