Description

Lemon Herb Roasted Chicken is a flavorful dish that combines juicy chicken with zesty lemon and fragrant herbs, perfect for family dinners or cozy gatherings.


Ingredients

  • Whole chicken (4-5 pounds)
  • Fresh lemons
  • Fresh thyme
  • Fresh rosemary
  • Garlic
  • Extra virgin olive oil
  • Salt
  • Pepper
  • Optional: Carrots and potatoes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, mix olive oil, minced garlic, chopped thyme, rosemary leaves, salt, and pepper for the marinade.
  3. Pat the chicken dry and rub the marinade all over the chicken, including inside the cavity. Squeeze lemon juice over it.
  4. If desired, chop carrots and potatoes into chunks and place them around the chicken in a roasting pan.
  5. Roast in the preheated oven for about 1 hour 15 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10 minutes before carving. Serve with roasted vegetables.
