  • 4 cups butternut squash, peeled and diced (about 1 medium squash)
  • 2 medium apples, peeled and chopped (Fuji or Honeycrisp recommended)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent (about 5 minutes). Add minced garlic for an additional minute.
  2. Stir in the diced butternut squash and chopped apples. Sauté for about 5 minutes until slightly softened.
  3. Pour in the vegetable broth, add cinnamon, and drizzle maple syrup. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the squash is tender.
  4. Use an immersion blender to puree the soup until smooth. Adjust seasoning as needed.
