- 4 cups low-sodium vegetable broth
- 1/4 cup pure maple syrup
- 1 tsp ground cinnamon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent (about 5 minutes). Add minced garlic for an additional minute.
- Stir in the diced butternut squash and chopped apples. Sauté for about 5 minutes until slightly softened.
- Pour in the vegetable broth, add cinnamon, and drizzle maple syrup. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the squash is tender.
