  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 2 tbsp low-sodium soy sauce
  • 1 cup chicken broth
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by chopping the garlic and slicing the mushrooms.
  2. In a large skillet over medium-high heat, add olive oil. Season chicken breasts with salt and pepper. Sear on both sides for 5-7 minutes until golden brown; remove from skillet.
  3. In the same skillet, sauté mushrooms until browned (about 5 minutes). Add minced garlic in the last minute.
  4. Pour in soy sauce and chicken broth, scraping any brown bits from the pan. Simmer gently.
  5. Reduce heat to low and stir in heavy cream and thyme; simmer for about 3 minutes until thickened.
  6. Return chicken to the skillet, coating it with the sauce. Simmer for an additional 5 minutes before serving.
