  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup orzo pasta
  • 1 can (14 oz) marinated artichokes, drained and chopped
  • 4 cups fresh baby spinach
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Juice of 1 lemon
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium heat with olive oil. Season chicken breasts with salt and pepper.
  2. Sear the chicken in the hot skillet for about 5-6 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute).
  4. Add orzo and chicken broth; bring to a gentle simmer while scraping up any bits from the pan.
  5. Return seared chicken to the skillet along with artichokes and spinach. Cover and cook for about 10 minutes until everything is cooked through.
  6. Lower the heat, stir in heavy cream and Parmesan cheese until well combined; serve hot with a drizzle of lemon juice.
