Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts (toasted)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/3 cup extra virgin olive oil
  • 2 garlic cloves
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Reserve 1/2 cup of cooking water before draining.
  2. Toast the pine nuts in a skillet over medium heat for 3-5 minutes until golden brown.
  3. In a food processor, blend basil, toasted pine nuts, garlic, and Parmesan until finely chopped. Slowly drizzle in olive oil while blending until smooth. Season with salt and pepper.
  4. Combine the drained pasta with the pesto in a large bowl, adding reserved pasta water as needed to coat.
  5. Serve immediately with extra Parmesan and cracked pepper if desired.
